Avocado Popsicles Recipe
Avocado and lime make a great tasting frozen treat!

- 1 cup (237ml) water
- ½ cup (100g) granulated sugar
- 1 medium avocado
- ¼ cup (59ml) lime juice
- 1 teaspoon vanilla extract
Heat sugar and water in a medium saucepan over low heat until sugar is completely melted. Cool completely.
Place avocado, lime juice, vanilla, and cooled simple syrup in a blender. Blend until smooth.
Pour mixture into popsicle molds. Top with sticks and freeze until firm, at least 4 hours.
Serve immediately or remove from molds and wrap individually, then re-freeze.
- Store in freezer for up to 1 month.
- To help remove popsicles from molds, run the molds under room temperature water for a few seconds or until they are able to pull out.
