Thanks to Dole and Yonannas, these Skinny Ice Cream Sandwiches are made with frozen bananas – so they’re so much healthier than regular ice cream sandwiches. The perfect treat for summer entertaining!
Raise your hand if you eat a too much when you go to parties. Heck, I eat too much on a random Tuesday…let alone at a party full of delicious food and drinks. Indulgence can be (and usually is) my middle name.
So…enter these Skinny Ice Cream Sandwiches. It’s the party treat that you can eat over and over…with way less guilt! It’s perfect if you’re like me and finally put on a bathing suit and then immediately took it right back off.
{I mean, it’s 110 outside…maybe I should just stay inside and skip the pool. Too hot to be in the water anyway.}
What’s even better about these Skinny Ice Cream Sandwiches is that they have only three ingredients, and that’s counting the sprinkles. Even better than that is they come together in about 10 minutes plus chilling time. If you have guests coming over last minute and you need a treat…this is the one you need to make.
Especially if you live somewhere like I do…where it’s 110 today. YES, I said 110. And I know I live in Sacramento, and it’s always hot here in summer, but OMG. 110? Really?
So…what makes these skinny? They have a secret. You ready?
They aren’t really made of ice cream. They’re made with frozen Dole bananas!
Okay, so you know the frozen banana soft-serve trick, right? Where you process frozen banana chunks and it turns into ice cream? I made Banana Walnut Chip ice cream awhile back and it was so good. Refreshing, frozen, and much healthier than regular ice cream. For that recipe, I used my food processor. For this one, I used my new toy:
A Yonanas Frozen Dessert Maker.
It’s such a cool kitchen gadget – you just add your frozen bananas and any other frozen fruit or mix-ins and it gives you soft-serve ice cream in seconds flat.
Since I was having some people over, I wanted to make Ice Cream Sandwiches instead of ice cream – way more portable and easier to serve for company!
Why was I having people over? Well, to celebrate Dole and their Peel the Love summer tour!
Did you know that Dole has a food truck tour going on? The Peel the Love Food Truck Tour is taking place across the country all summer long. You can hit up the truck at a location near you to taste some of the wonderful things you can make with bananas. The Peel the Love Truck was in Sacramento while I was in Austin for BlogHer, so I missed out on seeing it, but if you happen to be in Phoenix this weekend you can go check them out.
The truck is also stopping in Houston, Des Moines, Baltimore, and New York City all summer long. Check out the Peel the Love website for all the locations! Then you can pick up some fabulous recipes, and get some bananas, so you can make some of these Skinny Ice Cream Sandwiches too!
Like I said, these Skinny Ice Cream Sandwiches come together in minutes. You simply process your frozen bananas into a bowl. If the mixture is too soft for scooping, freeze it for a bit. (If you’re using the Yonanas maker, it will be the perfect thickness. If you’re using a food processor, you may need to freeze it before making the sandwiches because the heat from the processor can make it melt quicker!)
These sandwiches are made with reduced-fat vanilla cookies, the kind you’d make banana pudding with. Feel free to use your favorite low-fat cookie! Then, because my friends came over for a pre-4th of July hangout, I rolled these in red, white, and blue jimmies. Use your favorite colors!
Once they’ve been refrozen, you can serve at a party, or freeze in a ziploc bag. The leftovers stayed fresh while frozen until they finally disappeared!
Skinny Ice Cream Sandwiches – the perfect skinny party treat!
Skinny Ice Cream Sandwiches
Instructions
- A few hours ahead of making these ice cream sandwiches (or the night before), slice your bananas and freeze them.
- When ready to assemble ice cream sandwiches, line a cookie sheet with wax paper. Set out your cookies. Place sprinkles on a plate or in a shallow bowl.
- Place frozen bananas in a Yonanas dessert maker and process to make ice cream. If you don't have a Yonanas, you can use a food processor. (If you're using a food processor, the mixture may end up too soft. If it won't hold up to scooping, freeze it for awhile before making your ice cream sandwiches.)
- Scoop one tablespoon of frozen banana "ice cream" on half of the cookies. Top with the remaining cookies. Roll in sprinkles.
- Place back on cookie sheet and freeze for about an hour, then you can place them in a ziploc bag for storing in the freezer.
