Today is a super special day! It’s Meaghan’s baby shower day!

Meaghan is the genius behind the blog The Decorated Cookie and the amazing art book cookbook Sugarlicious. If you’ve never been over to The Decorated Cookie, you’re missing out. Seriously, she writes on marshmallows and puts stuff on sticks. And have you looked at her cookbook? It seriously is a sugar wonderland work of art. My copy is dog-eared with things I cannot wait to make.

I have to be honest: I’m a lurker over at Meaghan’s blog. I oogle all her goodies and have been for a very long time. So when Michelle over at Sugar Swings! asked me to be a part of Meaghan’s shower I immediately said yes!

The theme of our shower is rainbows. Which is cool, because, well, who doesn’t love a rainbow? Jordan’s birthday last year was a rainbow theme and I told my husband that, for my 20th (hardee har har) birthday, I want a rainbow theme too. {We’ll see if he remembers. #notlikely}

Meaghan and her family have gone through a lot to become parents and second-time parents. I think a rainbow shower is perfect for this happy occasion!

It being Christmas and all, I was making tons of cookies. Peanut butter blossom cookies are one of my favorites…especially with peanut butter cups. I remembered the cupcakes I made for Jordan and thought, why not dip the Reese’s? So I did. And aren’t they cute??

If you’re not into rainbows in the middle of December (and why aren’t you???) you can just make red and green, if you’d like. Christmas peanut butter cup cookies!

So, to Meaghan and her family, congratulations on your new baby girl! I’m SO happy for you. I’m seeing rainbows everywhere I go today, in honor of you!

Rainbow Peanut Butter Cookie Cups {Virtual Baby Shower!}

Ingredients
 

For the Rainbow Peanut Butter Cups

  • 36 Reese’s peanut butter cups , unwrapped
  • Candy melts in rainbow colors (or desired colors, think Christmas, Valentines, 4th of July...)

For the Cookies

  • 1/2 cup butter , softened
  • 3/4 cup peanut butter
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 teaspoons vanilla
  • 1 tablespoon milk
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 cups flour
  • 36 Reese’s Peanut Butter cups (Colored optional)

Instructions

Make the rainbow peanut butter cups:

  • Melt candy according to package directions. You need about 1/2 cup of melts per 6 peanut butter cups.
  • Dip peanut butter cups into melted colored candy and tap off excess. Place on a wax paper lined cookie sheet and chill until hardened. This can be done a day ahead of time.

Make the cookies:

  • Preheat oven to 350 degrees. Spray mini muffin pans (36 cavities) with cooking spray.
  • Cream butter and peanut butter until mixed. Add sugars and cream until fluffy. Beat in egg, vanilla, milk and baking soda. Slowly mix in flour until dough comes together.
  • Scoop 1 tablespoon of dough into each mini muffin cup. (Optionally, you could roll each cookie into a ball and drop it into the muffin pans. This will make them “prettier”.)
  • Bake for 8-9 minutes, until they just start to turn golden brown. While they are hot, place a peanut butter cup in the center of each. Cool completely (let the candy harden) before removing from pan. To remove, us a butter knife to carefully loosen the cookie from the pan. It should pop right out!

Recipe Notes

*Dipping the peanut butter cups in colored candy is optional, but pretty!
*If you don’t have colored candy melts, you can use white melts or almond bark and color it using candy coloring (NOT food coloring).
*Tip: make yellow and red first. Then mix for orange, etc.
*These freeze well, between layers of paper towels.
