It would seem I love mimosas and champagne. I feel like every other week I have a cocktail recipe for you…and most of the time they include prosecco or champagne in some way. What can I say? I love bubbles.
I knew I wanted to try and sneak in one more mimosa recipe for you this week. After all, Mother’s Day is Sunday and all mom’s need a mimosa on Mother’s Day. I’m pretty sure the inventor of the mimosa was a mom who just needed a reason to drink on a Sunday morning.
I’m not in love with the traditional mimosa made with orange juice. I love mimosas made with pineapple or cranberry juice in addition to the orange, but not plain orange. In fact, if I get served an orange juice mimosa I want about 95% champagne and only 5% juice.
Something I love to do when I’m creating champagne cocktails is to add more than just juice. I first fell in love with champagne when drinking Peach Bellinis in Las Vegas. Bellinis often have more than just juice – often they also include vodka or schnapps or some other type of alcohol.
What can I say? I also love mixing.
I thought about just making you a single mimosa recipe, but I decided that Mother’s Day (and, let’s be honest, every other day of the year) requires more than one mimosa. A pitcher is usually required, am I right?
This cocktail is a Pink Mimosa Punch that you can make for a crowd…or for just one. Or make the pitcher for just one…whatever.
I love adding fresh fruit to my mimosas, like a sangria. This mimosa punch has strawberries, raspberries, and oranges soaking in the pink champagne, vodka, and juice.
The juice portion of this mimosa recipe includes orange juice, for a traditional flavor, alongside fruit punch. We usually have some sort of fruit punch in our refrigerator, so why not add it to cocktails? After all, you all love my Fruity Vodka Punch, right?
You can use a frozen concentrate to make your fruit punch, or you can buy it in the section with the orange juice. They have all sorts of fun juice flavors now, from berry to peach to fruit punch. Choose one you like.
I also added vodka to my punch. You can use plain vodka, but this is really good with orange or strawberry vodka. I love flavored vodkas and have so much fun at the liquor store looking at all the different ones.
Most grocery stores carry a few flavors, like lemon or raspberry, either of which would be good. But if you live near a Bevmo or a Total Wine, you’ll find orange and strawberry and so many other fun flavors. Use whatever you love in this punch recipe.
This recipe is called Pink Mimosa Punch for more than just the fruit punch making it a nice pinkish color. I used pink champagne in this recipe! Pink champagne comes in several different forms: sparkling rosé, pink moscato, pink sparkling wine. You should use what kind of pink champagne you like in this recipe. I used a Korbel Sweet Rosé but I think a nice pink moscato or a brut rosé would be good.
What Pink Champagne will you like?
The answer comes down to sweetness. Mimosas are sweet anyway, because of the juice, especially when they’re made with juice other than just orange or cranberry. The kind of champagne you add will make this sweeter or not.
- Sparkling Rosé (not sweet, often called brut) is as sweet as white wine often is, depending on brand.
- Sweet Rosé (what I used) is a sweet champagne. It’s probably middle of the pack.
- Pink Moscato (often with bubbles) is the sweetest and good if you like sweet dessert-like drinks.

Pink Mimosa Punch
Ingredients
For one cocktail:
- 1 ounce orange juice
- 1 ounce vodka use orange or strawberry vodka for even more flavor
- 2 ounces fruit punch
- 3-4 ounces pink champagne or sparkling rosé
- Oranges and berries for garnish
For a party punch:
- 1 cup orange juice
- 1 cup vodka use orange or strawberry vodka for even more flavor
- 3 cups fruit punch
- 1 bottle 750ml pink champagne or sparkling rosé
- Oranges and berries for garnish
Instructions
- To make one mimosa: add juices and vodka to a champagne flute. Top with champagne. Garnish and serve.
- To make punch: add all ingredients to a pitcher. Stir. Add orange slices and berries for garnish.
