Callout Title
- There isn’t anything easier than this taco casserole – it’s full of meat, beans, veggies, and CHEESE!
- This casserole is layered in a large skillet and cooked on the stovetop. You don’t even need to turn on your oven!
- It’s the perfect fast weeknight recipe because it’s a 30 minute meal and hearty enough to serve all on its own. Or you can serve it with rice, tortillas, tortilla chips or try it with pasta.

Ingredients in Cheesy Taco Skillet
- Meat: I used lean ground turkey but you can definitely use ground chicken or beef.
- Vegetables: Diced onion, red bell pepper, and green bell pepper add extra flavor. Dice them small.
- Taco Seasoning: Use your favorite brand or mix.
- Beans: You can use any beans but I like using BUSH’S® Beans in Mild Chili Sauce because the sauce adds flavor.
- Corn and Olives: For extra flavor and color
- Shredded cheese: Obviously!
How to make Taco Skillet with Beans
- Cook the turkey, onion, and peppers over medium-high heat in a large pan or cast iron skillet. When the turkey is no longer pink, drain off the fat.
- Add the taco seasoning and beans with the liquid from the can. Stir and then simmer them for about five minutes. Mix in the corn and olives and cook them with the other ingredients for about a minute.
- Sprinkle the cheese over the top and cover the pan. Once the cheese is melted, it’s ready to serve.
Variations
- Meat: Instead of ground turkey, make your taco skillet dinner with ground beef or ground chicken.
- Beans: Pretty much any kind of beans will work in this dish. My husband loves the spicy beans in this dish! If you use plain canned beans, you might want to add some salsa to the pan to add flavor.
- Toppings: Feel free to add a few toppings like chopped cilantro, a scoop of sour cream, or some sliced avocado.
- Side Dish Ideas: Spoon it over white rice, brown rice, or cauliflower rice. Sometimes we stir cooked pasta into the skillet. It’s also great as a dip with tortilla chips.
- Other Ways to Serve It: Use it as a topping for baked potatoes or as a filling for burritos or tacos. I just love this one pan taco skillet meal – it’s saved me many times during busy weeks! The flavors are so good, and it’s so easy to pull together. If you’re looking for new easy supper ideas, be sure to add this one to your list!
FAQs
Cooking taco meat in cast iron is perfectly fine – it’ll add some great seasoning to your pan. The meat cooks up perfectly.
Cook the meat first, then drain the fat, then add the taco seasoning. Otherwise the seasoning will drain with the fat.
Store leftovers in the refrigerator for up to 3 days. You can reheat leftovers in a pan or in the microwave.
Add pasta or rice to the cooked taco meat – or add cooked pasta to the leftovers for a second dinner!
