Magic Bars with Oatmeal Cookie Crust
These treats are so magically good, you probably won’t believe it. Especially when you add my special touch, the delicious cookie crust!
I’m sharing the best magic bar recipe you’ll ever use: magic bars but with oatmeal cookie crust! It’s a multilayer dessert dream.

Ingredients in 7 layer bars
- Butter- softened and unsalted work best for this recipe
- Sugar- you’ll want to use both brown and granulated sugar for this
- Egg- I always use large eggs
- Baking soda- for leavening
- Cinnamon- a must with oatmeal cookies
- Vanilla extract- always use pure vanilla extract
- All-purpose flour- be sure to spoon and level it in the measuring cup – don’t pack it.
- Quick Oats- Make your own quick oats if you only have rolled or old fashioned oats.
- Chocolate chips- feel free to use any kind of chocolate you like
- Toppings- of your choice (see below)
- Sweetened condensed milk- make sure you’re not using evaporated milk. This is what gives the magic bar a thick, creamy and chewy sweet experience that you’ll love.
How to make oatmeal magic bars
- Prepare oven: Preheat oven to 350°F. Line a 9×13” pan with foil or parchment and spray well with cooking spray. These are very sticky and the foil helps remove them easily from the pan, but it’s not mandatory.
- Make the dough: Cream butter and sugars in the bowl of an electric mixer fitted with a paddle attachment. Beat in egg and vanilla. Mix in baking soda and cinnamon. Slowly beat in flour. Mix in oats.
- Bake: Press dough into pan. Dough will be sticky so it helps to spray your hands with cooking spray. It will be a thin layer on the bottom of the pan. Bake for 10 minutes.
- Remove hot pan from oven and sprinkle evenly with toppings. Pour sweetened condensed milk evenly over the top (try to avoid having it touch the sides of the pan). Return to oven and bake for 25-30 more minutes until the edges are browning and the top seems semi-set.
- Store: Cool completely before cutting. They’ll be very gooey – easier to cut once fully cool. Store in an airtight container for up to 4 days or freeze in a single layer for up to 3 months.

- ½ cup (100g) packed brown sugar
- ¼ cup (50g) granulated sugar
- 1 large egg
- ½ teaspoon baking soda

- 1 cup (124g) all-purpose flour
- 1 ½ cups Quick Oats
- 2 cups some sort of chocolate chips (see note)
- 2 cups additional toppings (see note)
- 1 14 ounce can sweetened condensed milk
