What are Midnights Cookies?

We all love a red velvet cookie but what we love even more, is a Midnight-inspired cookie. Taylor Swift fans, this one is for you.

How to make Midnights Cookies

This is an optional step, but these cookies bake better while listening to Midnight. I also recommend you keep “Anti-Hero” on replay.

  • Make frosting as directed. Frost cookies as desired. The pictured frosting used a Wilton round tip to pipe swirls, but you can also just frost the cookies. Leave a bit of frosting aside for the Lavender Haze cookies.
  • Midnights Cookies: Sprinkle with sprinkles
  • Snow on the Beach Cookies: Place snowflakes on top.
  • Bejeweled Cookies: Sprinkle with the gem or sparkly sprinkles.
  • Meet me at Midnight Cookies: Pipe clock hands at midnight with decorator icing.
  • 13 Cookies: Pipe a 13 with decorator icing.
  • Lavender Haze Cookies: Color a bit of the frosting with violet food coloring. Lay out a sheet of plastic wrap and put both white and purple frosting on it. Wrap it up in a log and cut off one tip – place it in a piping bag—Frost as desired. See note for a link to a post that explains this.

Expert Tips

  • The amount of red food coloring depends on the kind you use. For example, if you use regular grocery-store food coloring, you only need a teaspoon. If you use gel food coloring, use ½ teaspoon, a little goes a long way.
  • Add the vinegar at the end, so it doesn’t activate the baking soda. If you add it too soon, you would get a little red velvet volcano on your hands.
  • Don’t have white vinegar? Substitute lemon juice! Be sure to not use balsamic or red vinegar.

Recipe Notes

  • Snowflake sprinkles – you can find these at craft stores and online
  • Black decorator icing – you can buy the little tubes in the baking aisle or color some of the frosting black.
  • Here is a frosting tutorial for the swirled frosting.
  • Sprinkles: Many craft stores have fun sprinkle mixes, or buy single colors and mix your own. For fancier sprinkles, I love shopping at Sweetapolita (the one shown is from their advent calendar). Check out their Luxe line for the bejeweled cookies. For the midnight sprinkles here are some options: Fairy Tale, Obsessed, or Sugar Rush. You can also check out Fancy Sprinkles for other options.
