I only have one session left with my trainer. As much as I have loved the great workouts, I’m kind of glad. I’m tired of being asked “how’s your eating?”

Well, let’s see. I’m a dessert blogger, who bakes constantly and has no willpower. How do you THINK my eating is going?

I’m writing down all the workouts he’s created for me and I plan to keep on doing them. Plus, it’s almost summer so…

(1) I can do classes at the gym because Jordan will be with me and I’ll want to be alone a lot every day so I’ll workout double so I can use the child care.

and…

(2) I won’t be able to scarf 26 cookies at noon because she’ll be right there staring at me and then want some of my stash and I’m not sharing.

After a particularly brutal session last week when he asked about my eating and I told him I was headed home to make walnut butter and ice cream, I decided that maybe I should make something healthy. You know…try and be good, for a day at least.

Then I remembered that banana “ice cream” I read about last summer, over at Alli-n-Son. An ice cream made with only bananas and add-ins. No cream or milk or anything else. Sally made a milkshake using this method last week, which reminded me I wanted to try it.

Surely, that would be okay with my trainer, right?

While we’re on the subject of the gym, let’s talk workout clothing for a minute, mmkay? Recently I was contacted by Albion Fit to review some of their women’s fitness and swimwear. Now..back to the fabulous HEALTHY ice cream!

This ice cream comes together in a flash. Seriously, all you do is freeze some banana slices, then pulse them in a food processor until they’re smooth. It looks like and has the consistency of soft serve ice cream once it’s done. You can totally eat it just like that – pure frozen bananas.

But I’m me. I need to add mix-ins!

I love banana and walnuts together. I also love banana and chocolate. So I added both: some chopped walnuts and some mini chocolate chips. Feel free to substitute a vegan variety if you wish!

I also added a tablespoon of maple syrup to sweeten it. You can substitute honey or agave, or leave it out completely!

This ice cream is going into my go-to rotation. Depending on your add-ins it’s dairy-free, gluten-free, and vegan. And healthy!

Unless you eat the entire bowl…which is something I would totally do.

Healthy Banana Nut Chip Ice Cream

Ice cream made with frozen bananas!
Total Time 4 hours
Yield 16 servings
Serving Size 1 serving

Ingredients
 

  • 3 bananas sliced and frozen
  • 1 tablespoon maple syrup
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped toasted walnuts
  • 1/2 cup mini chocolate chips

Instructions

  • If you haven’t already, slice your banana into chunks and freeze in a sandwich bag. Once the bananas are frozen, you’re ready to make your ice cream.
  • Add frozen bananas to a food processor. Process for a few minutes. I had to stop occasionally and smoosh up some large frozen chunks that didn’t want to break up right away. Keep processing and you will eventually get what looks like soft serve ice cream. Add maple syrup and cinnamon and pulse until combined.
  • Transfer mixture to a tupperware bowl and stir in nuts and chocolate chips. Freeze until firm, at least 2-3 hours.
  • Enjoy guilt-free!
