Tons of brown sugar, stay soft for days, and so much flavor – they’re going to be your favorite chocolate chip cookie recipe EVER!
What is a pudding cookie?
When I say that these pudding cookies are my favorite pudding cookies, I’m not joking. I’ve made lots of pudding cookies over the years (like lemon, coconut, oatmeal, and chocolate) but up until now my favorite have been the Cashew Buttersctoch ones. Soft and full of flavor, those cookies were a hit. Butterscotch and cashews not withstanding, I think what made those cookies such a winner was the brown sugar. They were full of it…and so are these.
Pretty much these cookies are brown sugar pudding cookies. Brown sugar is the only sugar in the cookies, besides what’s in the pudding mix itself. Using all brown sugar in a recipe intensifies and deepens the cookie flavor while leaving them pillowy soft and chewy.
So, pretty much, when you add brown sugar AND pudding mix to a cookie? Softness explosion. If you like a soft cookie that still has some chew, these are for you.
The best part about a pudding cookie recipe is that you can completely change the cookie with one simple substitution. Those Cashew Butterscotch cookies had butterscotch pudding. (Hence the deep color and intense butterscotch flavor!) I chose a simple vanilla pudding for these cookies, so you really taste the brown sugar and vanilla you’d expect from a chocolate chip cookie.
Ingredients Needed
- Instant Pudding Mix – This is the secret ingredient to the best cookies. I use vanilla for this recipe, but you can use any flavor to change up the cookie recipe. Chocolate Pudding Cookies are fantastic too!
- Regular cookie ingredients, like butter and vanilla extract, all purpose flour and baking soda.
- Brown Sugar – these are totally brown sugar cookies – which adds tons of flavor AND keeps them soft.
- Patriotic Sprinkles and M&Ms – Use your favorites!
How to make 4th of July Cookies
These cookies are easy and come together fast. They do require chilling, but that’s because I love an extra-soft and gooey cookie. I added 4th of July M&Ms and red and blue sprinkles so they look like Fireworks Pudding Cookies! We all know that cookies are perfect for summer parties. They don’t melt or require serving utensils, which makes these the perfect party cookie!

I have a hard time wanting to go to parties with large crowds or even to smaller ones where there will be people I don’t know. I am not a conversation starter and as a kid I really didn’t have too many friends. However, I’m getting better at it and have found once I get to the party someone usually comes over to strike up a conversation. Now–these cookies look awesome! And I have to agree with you about red, white and blue! It’s so cheery and festive to me.
Hi Dorothy! I hope you will have a lot of fun to this Party!!!! I’ve never think that I could do cookies with pudding mixture! But Hey! This is a Marvelous idea!!! I have to try it!
Thanks!
Cat
Enjoy!
How fun are these cookies!? We don’t get invited to too many parties either since we have a daughter with an early bedtime. We’re the lame family that has to leave before 8 so we can start our bedtime activities. Have fun at the party!
Dorothy – Forth of July Parties are so fun. I’ve been going to a different one each year. Usually there is awesome food, swimming, paddle boating, and I think one year there might’ve been an ice luge. Haha. You must be looking forward to this one! I’ve never tried to make pudding cookies, but you’ve convinced me to try with all of those M&Ms and sprinkles. 🙂
I’m married to an extreme introvert, Dorothy, so I get it. When we first started dating and he told me he wanted to skip a party, his reasoning was, “I’m scared of the people.” So over the years, I’ve become more antisocial to make up for it.
Bottom line: I totally get how excited you are! We hardly ever get invited to parties, either. But I don’t feel sad about it.
These pudding cookies are over the top with that brown sugar! Texture is perfect!
