Celebrate Dr. Seuss’ birthday with Dr. Seuss Snacks: Green Eggs and Ham and a Cat in the Hat parfait! This is such a fun treat for your young kids to celebrate reading. I used to love making these for my daughter and even now that she’s a teenager she gasped with delight when she saw them on the counter.
These snacks are easy and fun and the parfait is also great for breakfast anytime!

Easy Dr. Seuss Snacks
Whether you’re celebrating Dr. Seuss or reading in general, it’s so much fun to make themed snacks!
I made these the first time when Jordan was in first grade – 8 years ago! I was super excited because she could read and had to do it regularly. Oh, if I only knew how irritating getting her to read would be, ha!
I’m the unique one in my family; reading is something I do regularly. I’ve always got a book with me! Jordan, not so much. If only making fun treats like this would work now like it did then…now she’d just roll her eyes and ask to listen to a book on tape.
If you’re looking to celebrate Dr. Seuss day on March 2 or are throwing a Dr. Seuss themed birthday party, then these treats are a must! Also: they’re easy. I don’t do anything hard around here!
Green Eggs and Ham Snack
Green Eggs and Ham was one of my favorite books to read to Jordan! I loved reading Dr. Seuss to her because it was so fun to read with the rhyming – we could almost turn them into songs.
To make the green eggs and ham you need just a couple ingredients:
- Mini Oreos (I used white chocolate covered Oreo Thin Minis)
- Green Mini M&Ms
- White chocolate chips
- Fruit Leather
To make the green eggs, you simply “glue” the green Mini M&M onto the mini Oreo with white chocolate. Melt the chocolate chips and just dab a little bit onto the center of the Oreo with a toothpick, then add a green M&M.
You can also start with plain Oreos dip them in melted white chocolate but that’s so much more work.
To make the “ham” I used fruit by the foot. You can also use fruit roll-ups or any fruit leather. Just trim it to size and you have bacon!
Cat in the Hat Parfaits
The other Dr. Seuss book we loved was Cat in the Hat. I could have read that book every day (and some weeks we did!)
The red and white striped hat is an iconic image so I turned the Cat in the Hat into fruit and yogurt parfaits! By layering greek yogurt and strawberries you get a healthy snack that doubles as breakfast.
To make the parfaits, simply mix together some vanilla greek yogurt (or plain) with cool whip. Layer this in a small glass with chopped strawberries. Easy!
These two easy snack ideas are the perfect addition to any Dr. Seuss party – or just because you’re hoping to get your kids to want to read!

Dr. Seuss Snacks
Ingredients
For the Green Eggs and Ham
- 10 mini white chocolate coated Oreos
- ¼ cup white chocolate chips
- 10 Mini green M&Ms
- 1 Fruit by the foot
For The Cat in the Hat Smoothie
- ¾ cup fresh strawberries chopped
- 1 approximately 5 ounce container greek yogurt vanilla, fat-free is best
- ½ cup Cool Whip
Instructions
For the Green Eggs and Ham
- Melt the chocolate chips on 50% power, stirring each 30 seconds, until melted and smooth. Using a toothpick, drop a teeny bit of chocolate on top of each white chocolate Oreo and top with a green mini M&M. Let dry.
- Slice small lengths of fruit by the foot and cut the edges to look like jagged bacon.
For The Cat in the Hat Smoothie
- Mix Cool Whip and yogurt. Place a bit in the bottom of two small glasses.
- Top with chopped strawberries, and then continue layering until your glass is full.
