These Chocolate Peanut Butter Marshmallow Pudding Cookies are some of the best pudding cookies yet! Chocolate and peanut butter make for a rich cookie, especially when filled with chocolate covered marshmallows and chocolate chips!

My cat loves my husband. And when I say love, I don’t mean “he feeds me and changes my litter box” love. I mean she luuuuuuuuuuuuvs him. With i’s dotted with pink puffy hearts and Mrs. Callie Kern doodles and all that.

Every night, we climb into bed and watch approximately 5 minutes of The Soup or No Reservations before we conk out. Callie lies on his side of the bed, waiting. As soon as my husband lays down, her drooling, eye watering, purr-fest begins. If he so much as touches my arm instead of petting her she shoots me a look that says, “I hope you die in the night so I can get an extra meal.” She then screams at him and urges his hand back onto her chin.

My husband is often traveling during the week, and Callie just isn’t the same without him. I try to stand in for him. I climb into bed and call for her. I pat the bed next to me and pet her a little. She gets all sandofish and goes to sit in the opposite corner, facing the wall. I’m just not her love interest, I guess.

Now, the dog…well. That’s another post.

Does anyone else have really strange animals? It can’t just be us, right? Because what does that say about me?

Cookies. Pudding cookies. With peanut butter and chocolate and marshmallows.

I made these cookies awhile ago – after Christmas. And I never posted them! I realized I needed to ASAP – because they use Peepsters. Have you ever seen those candies? They come out at Christmas and Easter, and are made by the people who make Peeps. They’re chocolate covered marshmallows and are SO good.

You all know how much I love pudding cookies. I’m addicted to them! They come out perfect and soft every single time. For these cookies I used chocolate pudding mix, and I subbed peanut butter for some of the butter. Best. Decision. Ever! It’s like a rich chocolatey, peanut buttery cookie all rolled into one! Then, for good measure, I added chocolate chips and marshmallows. They’re like a chocolate fluffernutter cookie!

Chocolate Peanut Butter Marshmallow Pudding Cookies

These Chocolate Peanut Butter Marshmallow Pudding Cookies are some of the best pudding cookies yet! Chocolate and peanut butter make for a rich cookie, especially when filled with chocolate covered marshmallows and chocolate chips!

Ingredients
 

  • 1/2 cup butter softened
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup peanut butter
  • 1 3.4 oz box instant chocolate pudding mix
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tsp baking soda
  • 1/2 teaspoon baking powder
  • 2-1/4 cups flour
  • 1 cup chocolate chips
  • 1 cup mini marshmallows

Instructions

  • Cream butter, peanut butter, and sugars in the bowl of an electric mixer fitted with the paddle attachment. Add pudding mix and blend until combined.. Add eggs and vanilla and beat until combined. Mix in baking soda and flour. Stir in chocolate chips and mini marshmallows. Chill dough for at least 30 minutes.
  • When ready to bake, preheat oven to 350°F. Line cookie sheets with parchment paper.
  • Scoop one tablespoon balls of dough and place on cookie sheet. Bake 7-9 minutes until the outside just looses it’s glossy un-baked look. Cool for 5 minutes before moving to a rack to cool completely. Cookies can be frozen for later consumption, if desired. Place in a ziploc bag between layers of paper towel for best results when freezing.

  1. i have no idea chocolate covered peepsters existed! now I have to go hunt them down this weekend at Target. Oh and pudding cookies? I love how gorgeous they are each time. They look wonderful Dorothy!
