Chocolate Granola Bark – If you make a candy out of chocolate and granola that means it’s healthy, right?
I’ve discovered a new love: Barre classes. Have you ever done them? It’s kind of like pilates but a lot of the class uses a ballet bar. Guess what? It’s freaking amazing. I leave and I feel all glowy and stretchy and…happy.
{Exercise making me happy…nope. Never felt like that before.}
I have three trial classes to my local barre studio…and then I’m totally joining. I think my body was craving this sort of exercise; a mind and body workout. Also? It kicks my butt. I’m not overly sweaty or sore but within 3 hours of class I’m falling asleep at my computer.
I just finished class before I started writing this, so I better hurry up. Tons to do and by lunch I’m going to want a nap.
So, let’s talk granola. Chocolate Granola Bark, that is.
A few weeks ago Cascadian sent me some of their newest snack, two packages of granola bark. (I worked with them back in February and the gift was a thank you.) I considered both packs single serve, and they were both gone in 24 hours. #wishIwasjoking
As soon as I opened the package and realized that Granola Bark is now a thing I flashed back to this post. I guess I was ahead of my time. White chocolate and granola…that was my idea of a January “healthy” treat. I don’t change much, lol.
Back then my version of granola bark didn’t take off. It may have been too avante garde for 2012…or it may have been the crappy photos. We’ll go with I was “forward thinking” and granola in food hadn’t taken off yet. Or something…
The second the bark they sent me was gone I was craving more. So I decided to make my own. Because, well. Food blogger.
I’m calling this version Chocolate Granola Bark. You could also call it Chocolate Peanut Butter Granola Bark, because I used peanut butter granola. You can use any kind of chocolate and any kind of granola (store bought or homemade) that you want.
There are only TWO ingredients in this Chocolate Granola Bark recipe. TWO! And it takes about 10 minutes.
I love those kinds of recipes, don’t you? And the variations are endless. Think of the possibilities:
- White chocolate chips, dark chocolate, milk chocolate, semi-sweet, butterscotch, cinnamon, mint, you name your favorite!
- Granola – the sky is the limit. Pick your favorite! I used the same decadent peanut butter granola I used in this recipe. Chocolate, vanilla, with fruit, without…you name it it’ll be good.
This Chocolate Granola Bark is way too easy to make this. Pretty much you spread out your melted chips and spread the granola over the top. Let it harden, then break it up and eat it.
Easy to make, easy to eat. Good thing granola is healthy…right?
Let’s just go with it. Chocolate Granola Bark is healthy and it’s also a good after-Barre snack. Or something?
Chocolate Granola Bark
Ingredients
- 1 bag 12 ounces semi-sweet or milk chocolate chips
- 2-4 cups of your favorite granola cereal I used Peanut Butter Granola
Instructions
- Melt chocolate in a microwave safe bowl on 50% power in 30 second increments, stirring between each, until melted and smooth. If it seems like the chocolate is having trouble melting you can add 1-2 teaspoons of vegetable oil or crisco to aid in the melting process.
- Spread melted chocolate on a cookie sheet lined with waxed paper. Spread into a large rectangle (no bigger than 10x15). The bigger the rectangle, the less chocolate per bark piece. A smaller rectangle will have thicker chocolate. Your choice.
- Spread granola evenly over chocolate. Press lightly to adhere. Chill until set. Break into pieces and serve. Store in an airtight container for up to 4 days.
