I have an interesting relationship with granola. I love it because it tastes so darn good…and I also hate it for the same reason. Because something that tastes that good? Makes me want to eat it allllll.
Then, if I put granola in something like, say, a Chocolate Cheesecake Peanut Butter Granola Parfait? Well, then. All bets are off.
Name one thing that you cannot get enough of. Is it bread? Chocolate? Steak? Vegetables or Fruit?
{Seriously, if anyone said vegetables or fruit I’m not sure we can still be friends. Also? Teach me how to love it that much.}
I have a lot of those foods that, when in the house, they don’t last. One of the big ones? Cereal. And the major subset of cereal that is my undoing? Granola. Specifically? Peanut Butter Granola.
I love eating granola because it satisfies me. Often times I’ll eat a bowl of regular cereal and I’m hungry an hour later. But if I eat a bowl of granola I’m satisfied. I also love the crunch and the flavor of granola. I love it with milk, I love it on yogurt. And now? I love making dessert parfaits with it.
If you’re as addicted to granola as I am, you’re going to love this recipe for two reasons.
1. It’s no bake chocolate cheesecake layered with peanut butter granola. How could you not love it?
2. The granola I used? It’s unbelievable. I have no words.
My favorite new granola is Cascadian Farms Peanut Butter Bliss. This is some serious granola. It’s crunchy, sweet, and decadent, so it’s the perfect pairing with a dessert recipe. And if you don’t like peanut butter granola, don’t worry. They have a Chocolate Lover’s one too. It’s got actual chunks of chocolate inside.
Honestly, I think I ate a whole bag of Peanut Butter Bliss just by myself. Jordan loved the Chocolate Lover’s. Mel even liked it. And you know how Mel is.
So pretty much this granola is golden. And since it pairs so well with a decadent dessert, it’s perfect for Valentine’s Day, or date night, or a random Wednesday.
Let’s talk about this recipe. It’s no bake, it’s full of peanut butter granola, whipped cream, and chocolate cheesecake. Do I need to say more?
The chocolate cheesecake is super easy to make and it’s so rich and good. And it’s easy; melted baking chocolate is mixed with cream cheese and some granulated sugar. Then you fold in whipped topping or whipped cream to give it some volume.
Simply layer the chocolate cheesecake with more whipped cream and layers of granola. You can use pretty dishes, bowls, or even shot glasses for your servings. These little parfait dishes came from Kohls (I think) and they’re actually deceivingly large. I filled 3 of them, which is actually about 6 servings…but it’s hard not eat a whole one. Use whatever dishes, jars, or little glasses you have on hand. You could also use a larger trifle dish for one big parfait, if you want.
These lasted about 24 hours in my house before they disappeared. Overnight the granola softened a little but still had good texture. If you want crunchy granola, make and serve these the same day. If you don’t mind a softer (but still yummy) texture, you can make them ahead of time.
However you make them, you must try the Cascadian Farms Granola. Holy cow, I’m not kidding. Favorite granola – ever.
Cut the recipe in half and make it for two. Or one. I won’t judge. 🙂
Chocolate Cheesecake Peanut Butter Granola Parfait
Ingredients
- 2 ounces semi-sweet baking chocolate
- 4 ounces cream cheese softened/room temperature to avoid lumps
- 2 teaspoon granulated sugar
- 1 teaspoon vanilla
- 2 cups whipped topping or freshly whipped cream divided
- 1 1/2 cups peanut butter granola
Instructions
- Heat baking chocolate in a large microwave safe bowl in 30 second increments on high power, stirring between each, until melted and smooth. Cool 5 minutes.
- Add cream cheese to the chocolate and beat with a hand mixer until smooth. Beat in sugar and vanilla. Chill for 20 minutes, until completely cool. Then fold in 1 cup of whipped cream or whipped topping.
- To make trifles: layer chocolate cheesecake, granola, and more whipped cream in small trifle dishes. This makes 4-6 servings, depending on the size of your dishes. My dishes (pictured) were a little large and held about 2 servings per dish.
- Store in refrigerator. If you use Cascadian Farms Peanut Butter Bliss Granola, the granola will soften overnight, but it won’t get soggy and is still good even after 24 hours. The same can’t be said for all granola brands.

This is like the best idea ever! Peanut butter, chocolate, cheesecake, and crunchy granola… yum! I love granola, and usually have a bowl with milk or Greek yogurt. I would love to have one of these parfaits for dessert any day!

Oh boy does this look good!! ย I love pb and chocolate combos but I would have to say the one thing I can never eat enough of is ice cream. ย I actually hide some in the freezer as my secret stash (ridiculous I know)!
