What is blueberry delight?

One of my all-time favorite blueberry desserts is blueberry delight! It’s an easy-to-make no bake blueberry dessert that is always a crowd-pleaser. This dessert goes by quite a few names – blueberry delight, blueberry lush, blueberry lasagna, blueberry yum yum dessert, and blueberry dream dessert are just a few!

It’s a classic no bake dessert with layers of deliciousness. It starts with a no bake graham cracker crust layered with vanilla pudding, blueberry pie filling, Cool Whip, and decorated with fresh blueberries. It’s creamy and fluffy with crunch from the crust and sweet from the blueberry pie filling. This will be your favorite summer recipe!

Ingredients in blueberry delight

Ingredients Needed

  • Graham Cracker Crumbs: You can use a box of them or crush your own using whole graham crackers. Just place them in a ziploc bag and roll with a rolling pin.
  • Granulated Sugar: To add a little sweetness to the crust. You can swap brown sugar if you prefer.
  • Butter: Use melted unsalted butter to form the crust.
  • Pudding Mix: Instant vanilla pudding mix mixed with whipped topping makes the filling – no milk needed. You can also use cheesecake flavor or even lemon!
  • Cool Whip: Use any kind or flavor of whipped topping.
  • Blueberry pie filling: You can use a can of it or my homemade blueberry pie filling recipe.

Variations

Any no bake crust you like will probably work with this blueberry delight, like vanilla wafer crust or other cookie crusts. You can also use a baked crust like a shortbread cookie crust or pastry crust, but this will add time and steps to the recipe.

Use canned or homemade blueberry pie filling. You can also change it to cherry pie filling, strawberry, or other fruit pie filling that you like!

You can also use homemade whipped cream instead of prepared whipped topping, but homemade whipped cream doesn’t keep as well.

How to make Blueberry Delight

  1. Combine the graham cracker crumbs and sugar in a mixing bowl. Add the butter and stir with a fork until the mixture is sandy. Press the mixture into a 9” square pan.
  2. Place 8 ounces of Cool Whip in a bowl. Add the dry pudding mix and stir until the mix is dissolved. Spread the pudding filling over the crust.
  3. Spread the pie filling over the pudding layer and spread more Cool Whip over the top. Sprinkle graham cracker crumbs over the dessert lasagna and refrigerate it for at least one hour before serving.
  4. I like to sprinkle fresh blueberries over the top before slicing it.

Expert Tips

  • For a light filling, don’t overmix the Cool Whip and pudding mix. This will keep the whipped topping nice and fluffy.
  • Storage: You can make this blueberry dream dessert up to a day in advance, and leftovers will keep for three days in the refrigerator. While you can theoretically freeze it, I don’t recommend doing so.
  • I like to sprinkle fresh blueberries over the top before serving it, but this is optional. If you want to do this, wait until serving it; otherwise, the blueberries can stain the whipped topping.

  1. I had to add more cool whip than stated. It wouldn’t spread without the Graham cracker crust lifting. Need to either make the pudding as a pie filling or add st least 2cups of whip cream.to make the filling spreadable. Any other suggestions to what I maybe doing wrong?

    1. Instead of dropping it all in one place, drop spoonfuls evenly over the crust and it’s easier to spread that way.

    1. You can but it won’t be as sturdy. If you want to add a few tablespoons of milk that’s a better option.

    2. Can this be made with lemon pudding and still be as delicious as the vanilla pudding? And also maybe add 1/2 cup or so of sour cream to pudding/cool whip mixture?

      1. Lemon pudding would be amazing!! And you totally could add some sour cream for a bit of tang.

  2. Delicious and easy peezy! I used arrowroot instead of cornstarch because itโ€™s what I had on hand and it worked great. Thank you
