Why is it that, no matter how much you give your kids, they always want more?
You say, sure, have a cookie. They respond, “Can I have two?”
You say, yes, your BFF can come over for a few hours. They say, “Can she come over all day?”
You say, let’s skip washing your hair tonight, it’s late, we’ll wash it tomorrow. They beg, “Can we skip tomorrow too?”
Give an inch…take a mile, right?
As I type this, my daughter is sulking around moping. She’s boooooooored. She has noooothinggggg to doooooooo. I am spending a few minutes catching up online and making a mile-long Walmart list for first thing in the morning. Oh, and then I’m going to go put dinner in the oven, wash her hair, put sheets on my bed, and put away two loads of laundry. I didn’t get around to that this afternoon because we spent 3 hours taking Jordan to see the community theatre production of The Little Mermaid, where I spent $30, packed snacks but got two popcorns since she didn’t want to share.
Now I kind of feel like having a tantrum. Or making a tray of brownies. Or more of these pretzels, since they are loooooong gone.
Back before Christmas I was trying to think of ideas for what to make for the school office staff and Jordan’s teacher. I didn’t want to make something baked, because, well. They get a lot of baked goods from everyone. Plus, I wanted something super easy I could do in a few minutes flat.
I went to my BFF Google and found these pretzels over at Averie Cooks. They were fast, easy, and made in the microwave. SOLD. But you know me…I have to change every recipe I try. My mind immediately went to the jar of Cookie Butter (Biscoff) I had in my cabinet. And, since Cookie Butter and white chocolate are BFFs, it was a natural progression to these: (Biscoff) Cookie Butter Pretzels {with White Chocolate}.
Seriously, they are made in the microwave. Heat and stir. Repeat twice. Pour on some cookie butter and white chocolate chips. Microwave. Stir. Spread. Sprinkle with nonpareils. Sit on hands waiting for them to cool. Eat enormous amounts and bag them up quickly so you don’t eat them all before you give them away. The end.
And yes, I put rainbow nonpareils on them at Christmastime. It’s, like, the food bloggers curse: I can’t post red and green after December 25th…so everything I make after December 15th is dressed plain for every day.
These pretzels are the perfect snack. Expect your kids to ask for more.
Biscoff Cookie Butter Pretzels
Ingredients
- 1/2 cup vegetable oil
- 1/3 cup sugar
- 2 tablespoons brown sugar
- 1 1/2 teaspoons cinnamon
- 1/4 cup Cookie Butter or Biscoff
- 2/3 cup white chocolate chips
- 5 cups pretzels
- Sprinkles for decoration, if desired
Instructions
- Line a cookie sheet with parchment paper.
- Place Cookie Butter or Biscoff in a small bowl and microwave for 30 seconds. Set aside.
- Place oil, cinnamon, and sugars in a large microwave safe bowl. Add pretzels and toss to coat. Microwave on HIGH for 1 minute, stir to coat. Heat another 1 minute, stir to coat. Repeat for a third time (total 3 minutes cooking time).
- Pour heated cookie butter and sprinkle white chocolate chips over pretzels. Heat in microwave for an additional 45 seconds to aid in melting the chocolate. Stir carefully.
- Spread pretzels on prepared cookie sheet and sprinkle with a generous dose of sprinkles. Chill until set. Store pretzels in an airtight container.

I have been dipping pretzels in Biscoff…you are a genius to COAT them in chocolate Biscoff!!! I’m thinking these would be very dangerous to have around me…I KNOW I would eat every last one!!!!

These kinda sorta look AMAZING, Dorothy!! When I saw Averie’s recipe I may or may not have licked my computer monitor in frustration because I wanted them so dang bad. But upping the ante with Biscoff? You truly know the way to my heart.
