Easy Chicken Salad Sandwiches with Avocado

Fresh, savory, and packed with protein, it’s easy to see how this lunchtime favorite has become a go-to for so many over the years. We love this easy chicken salad without mayo – instead I use avocado and greek yogurt to bind the mixture together. These are healthier with a bit of southwestern flair!

ingredients in avocado chicken sandwich.

Ingredients Needed

  • Chicken – This should be already cooked and either shredded or cubed. Rotisserie Chicken is great too!
  • Avocado – medium-sized and ripe avocado
  • Greek yogurt – nonfat, plain yogurt is best
  • Salsa – Use your favorite brand

How to Make Chicken Salad Sandwiches without Mayo

  • Prepare the chicken: Take your cooked chicken and either shred or cube it. Shredding can provide a more even texture, but cubing can give it a more dynamic consistency. It’s up to you!
  • Combine the ingredients: Peel and seed your avocado and mash it thoroughly. In a medium bowl, mix avocado with salsa, salt, pepper, and yogurt. Once combined, stir in your shredded or cubed chicken and mix thoroughly.
  • Build the sandwiches: On the bread of your choice, place a generous dollop of chicken salad and top it with your desired veggies. Enjoy!

Variations

Part of the beauty of chicken salad is that you can pretty much add anything to it and end up with something yummy. A few popular variations include:

  • Using sour cream instead of greek yogurt
  • Adding hard-boiled egg
  • Using extra veggies like shredded carrot, diced red onion, or chopped celery
  • Adding a bit of sweetness with dried fruit, like raisins
  • Swapping regular ol’ bread for something ~fancier~, like sourdough or soft rolls.

FAQs

Will chicken salad sandwiches get soggy?

If you store chicken salad with bread, yes, the bread will get soggy. If you want to save some of your salad for later, store it separately from the bread.

Can chicken salad sandwiches be made a day ahead?

I recommend making the chicken salad ahead of time and assembling the sandwiches just before serving.

Can I make avocado chicken salad without eggs?

Yes! Eggs are totally optional in chicken salad.

  1. I know how you felt- I visited home from my Florida internship a few weeks ago and had to fly all by myself; parking and everything. It was a very different and strange experience! I don’t like chicken salad that much because I hate mayo, so it’s neat to see it done with greek yogurt- I’ll definitely have to give it a try sometime when the craving hits or when my friends or family want it!

    1. Totally – that’s my hang-up on most creamy things – the mayo. Greek yogurt is the perfect sub!

  2. Blogging boot camp sounds like a blast! I’m sure you came home with a ton of valuable info! Also, the sandwiches look wonderful! These would be great to pack for my work lunches! I really like the idea of using a rotisseire chicken…it certainly would make the prep time go really fast!

  3. So glad that you wore your big girls pants all weekend and flew, traveled, dealt with the whole ordeal of airports, traveling, etc. Just getting thru security these days is tiring! And being gone, even for 36 hours I’ve found, and letting your family get a chance to see how things do or don’t run so smoothly without mom around, is quite nice ๐Ÿ™‚

I know it’s purely a gift to your readers to share what you learned, since you already know what you learned and don’t need to share it, but anything you do want to share, I am all ears!

    1. I feel compelled to share. Such great info! I need to get organized first. ๐Ÿ™‚ Thanks Averie!

  4. You can also find canned chicken breast that’s already cut cup/shredded (like tuna in a can). I LOVE chicken salad. This sounds like a healthier option….especially since it uses Greek yogurt instead of mayo. This is exactly what I’m looking for right now! So that is for not waiting to share it. ๐Ÿ™‚

      1. You’re welcome! Also that should’ve said “Thanks for not waiting to share it.” Not “that is for not waiting to share it.” lol Silly iPad.
