These Apple Bars are made with apples and sugar cookie dough. Along with that, they have a delicious brown sugar frosting that completes the recipe perfectly. They are super easy and a great recipe to use up any leftover apples!
The Best Apple Pie Bars
I personally cannot get enough of fall and the apple season and these sugar cookie bars are perfect for that. They are rich and gooey and perfect for a crowd because a small slice is all you need to satisfy that apple craving.
These bars have an amazing frosting that you do not want to miss out on: a brown sugar frosting that is so good. All that being said, I also love these bars without the frosting. They are great any way you twist them!
Ingredients Needed
- Sugar Cookie Dough: These are semi-homemade with a roll of sugar cookie dough but you can also use a package mix (plus the ingredients) or my homemade sugar cookie recipe.
- Toffee Bits: I love toffee and apple together
- Apples: Use your favorite kind of apple. I love Granny Smith for baking because they hold up and the tart mixes with the sweet perfectly.
- Brown Sugar: Remember that brown sugar needs to be packed when you are measuring!
How to make Apple Bars
- Break up cookie dough in a large bowl. Stir in apples, cinnamon, and toffee. You may need to use your hands to get it completely mixed.
- Press dough into prepared pan. Bake 20-30 minutes or until the cookies are browned and cooked through. Cool completely before making frosting.
- Heat butter in a small saucepan over medium low heat. Add the brown sugar and milk and cook until the mixture boils. Remove it from the heat and stir in the powdered sugar and vanilla.
- Pour immediately over cooled bars. Let set, then cut and serve.
Expert Tips
- If you’d like, you can make my homemade sugar cookie dough if you don’t want to get one from the store!
- Wait until the bars are completely cool before pouring on the frosting. They’ll hold up better that way.
- Cooking the frosting too much makes it more crumbly, so be sure to remove it from the heat right after it boils. It’ll set quickly, so be sure to pour it immediately over the cooled bars.

Apple Toffee Bars Recipe
Ingredients
Bars:
- 1 16.5 ounce roll sugar cookie dough
- 1 large green apple diced
- 1 teaspoon ground cinnamon
- ¾ cup toffee bits
Frosting:
- ¼ cup (57g) unsalted butter
- ½ cup (100g) brown sugar
- 2 tablespoons (30ml) milk
- 1 cup (113g) powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Line a 9×9″ pan with foil and spray with nonstick cooking spray.
- Break up cookie dough in a large bowl. Stir in apples, cinnamon, and toffee. You may need to use your hands to get it completely mixed. Press dough into prepared pan.
- Bake 20-30 minutes or until the cookies are browned and cooked through. Cool completely before making frosting.

- Store in an airtight container for up to 2 days.
Recipe Notes
- Add a bit of salt to the frosting if it’s too sweet for your taste
- You can use a pouch of sugar cookie mix (plus the ingredients to make the dough) or homemade sugar cookie dough
