These Pistachio Rice Krispie Treats are the most unique spin on the classic cereal treat. By adding pudding mix to the marshmallow mixture you get a treat full of pistachio flavor – they’re so good.
Instead of just making a classic Rice Krispie treat, try something new with this pistachio version. They are not only have a light and fluffy texture, but the pistachio flavor is so good. The amazing flavor comes from pistachio instant pudding mix which is pretty genius. 5 ingredients and 15 minutes of cooking time – these are some of my favorite cereal treats I’ve ever had (and that includes peanut butter Rice Krispie treats)!
Ingredients Needed
- Marshmallows: You can use regular sized, or miniature marshmallows as long as you have enough – make sure to use fresh marshmallows.
- Rice Krispies Treats: Use fresh cereal, generic is fine.
- Pistachio Instant Pudding: You can find this in the baking section of many grocery stores. Make sure to use INSTANT pudding.
- Butter: I prefer to use unsalted butter in all my recipes.
How to Make Pistachio Crispy Rice Treats
- Melt the butter in a large pot over medium low heat. Add the marshmallows and stir until melted. Remove from heat and stir in pudding mix and vanilla extract.
- Add cereal and stir to coat with the marshmallow mixture. Pour into prepared pan. Press firmly to compact.
Expert Tips
- It is always important to use fresh cereal, and it is especially important to use fresh marshmallows. If the ingredients are stale, the recipe will taste stale.
- If you want them more green you can add a few drops of food coloring.
- Add some chopped pistachios for even more flavor.
- When pressing the mixture into the pan, spray some cooking spray on your hands or on a sheet of wax or parchment paper. This will make sure that the mixture doesn’t move and stick.
Storing
Store them in an airtight container on the counter at room temperature for up to 3 days. I recommend completely slicing the bars before putting them into the freezer. Put them in an airtight container and freeze them for up to 3 months.

Ingredients
- 9 cups (237g) Rice Krispies Cereal
- 15 ounces (424g) mini marshmallows
- 8 tablespoons (113g) unsalted butter
- 1 (3.4 ounce box ) pistachio pudding mix
- 1 teaspoon (15ml) vanilla extract
Instructions
- Line a 9×13-inch pan with foil or parchment and spray with nonstick cooking spray.
- Measure out cereal and place in a large bowl.
- Melt the butter in a large pot over medium low heat.
- Add the marshmallows and stir until melted. Remove from heat and stir in pudding mix and vanilla extract.
- Add cereal and stir to coat with the marshmallow mixture. Pour into prepared pan. Press firmly to compact. Tip: spray wax paper with nonstick cooking spray so you can press without it sticking to your hands.
- Let set until firm then slice into bars. Store in an airtight container for up to 3 days. To freeze, let cool completely then cut into bars and wrap each individual bar in wax paper and freeze in an airtight container for up to 3 months.
Recipe Notes
- Use any flavor Rice Krispies cereal.
- You can use any size marshmallows just make sure to use 15 ounces.
- These stay extra gooey but will get stale if not stored properly.
- Only use FRESH marshmallows and not-stale cereal for best results.
