Easy Lemon Popsicles Recipe
I love lemon dessert recipes but there’s something extra special to love about this one for summer. These lemonade popsicles are tiny, refreshing, and have the perfect amount of sweetness to it.
If you’re a regular reader here, then you know I couldn’t resist adding pie crust to these tiny treats. That’s what makes these lemon ice pops a standout dessert. It’s basically a lemon pie but in popsicles form. Soak up the sun and let these lemon ice pops cool you down all summer long.
Ingredients Needed
- Yogurt: I’m using nonfat vanilla Greek yogurt but any yogurt may be substituted
- Lemon juice: I recommend using freshly squeezed lemon juice for a brighter flavor
- Sugar: just half a cup granulated sugar since the rest of the sweetness will come from the yogurt and lemon juice
- Lemon extract: adding pure lemon extract will give your lemon popsicles a full lemon flavor – lemon juice doesn’t add much flavor. The extract will help give it a nice lemon flavor you’d expect.
- Food coloring: I’m using yellow food coloring to make these popsicles look like they taste!
- Cookies: I’m using crushed shortbread cookies as the pie crust. I have also tried this recipe with Nilla Wafers or Golden Oreos and they all turn out amazing.
How to make lemon popsicles
- Combine the yogurt, lemon juice, sugar, extract, and food coloring in a medium bowl to make a syrup-like mixture.
- Pour lemon mixture into the mold. You can use paper dixie cups or popsicle molds for this.
- Sprinkle cookie crumbs on top of the mixture and stir gently with a toothpick or popsicle stick. Then pack what crumbs are left on top to give the lemon popsicle a pie crust.
- Poke sticks or colorful straws into the mixture.
- Freeze for at least 4 hours or overnight. Then remove from popsicles molds and enjoy!
Expert tips
- It’s easiest to freeze the dixie cups if they’re sitting on a cookie sheet
- To easily remove your popsicles, place the mold in warm water for a few seconds
- Use freshly squeezed lemon juice instead of bottled lemon juice to maximize the lemon flavor
- Feel free to add in a bit of lemon zest to the popsicle mixture in place of lemon extract
- If you have a popsicle mold these will look totally legit!
FAQs
You can use a traditional mold or dixie cups to freeze these lemon popsicles.
These lemon popsicles take about 4 hours to freeze or you can leave them in the freezer overnight.
Place the mold in a bowl of warm water for a few seconds to unstick the popsicles. The lemon popsicles should easily come out.
Lemon Pie Popsicles
Ingredients
- 2 cups nonfat vanilla Greek yogurt
- 3 tablespoons (45ml) fresh lemon juice
- ½ cup (100g) granulated sugar
- ¼ teaspoon pure lemon extract
- 2-3 drops yellow food coloring
- 2-3 shortbread cookies crushed (or use Nilla Wafers or Golden Oreos)
Instructions
- Stir yogurt, lemon juice, sugar, extract, and food coloring in a medium bowl using a spatula or wooden spoon.
- Scoop equal amounts of lemon mixture into paper dixie cups or popsicle molds. Mine filled 8 dixie cups about ⅔ full.
- Sprinkle about 2 teaspoons of cookie crumbs on top of the yogurt mixture. Use a toothpick or popsicle stick to stir gently. Pack what crumbs are left on top.
- Insert sticks or colorful straws. Freeze for at least 4 hours or overnight. (It’s easiest to freeze the dixie cups if they’re sitting on a cookie sheet.) Remove paper or remove popsicles from molds and enjoy!
Recipe Notes
- You can substitute regular yogurt if you prefer. You can even use flavored yogurt (some brands even have lemon yogurt which would make these even more lemon flavored).
- If you want to swap sweetener you can, but you’ll probably need a bit less.
