ULTIMATE Chocolate Dipped Cookies

First things, first: I can’t claim responsibility for this chocolate dipped cookie recipe. This one belongs to my parents all the way. I wish I could remember which one sent me the idea, but either way, it was an amazing one: dip snowball cookies in chocolate, like a truffle.

If you’ve been following along, you already know wedding cookies, aka snowballs, are one of my all-time favorite cookie recipes. So, the idea of dipping them in chocolate? Well, let’s just say I wasted no time trying out!

And the verdict? OH MY GOD, SO FABULOUS. If I had to pick a favorite way to eat my wedding cookies, it would be this one. Chocolate cookies dipped in powdered sugar…forever and ever. It’s such an easy way to give a classic cookie an upgrade. Snowballs are so easy to make, and adding the extra chocolate coating just takes them over the top.

What are Chocolate Snowball Truffles?

I combine my Mom’s Russian Tea Cake recipe for this recipe, which is probably one of my favorite cookies, and then you coat it in my favorite substance (chocolate)? Really, it’s a match made in heaven.

If you’ve never dipped cookies in chocolate, fear not. You can use Candiquik or chocolate almond bark for this recipe. They are both formulated to melt like a dream – it makes it really easy to coat the cookies.

How to Make Cookies Dipped in Chocolate

  1. Although I do give you a recipe for snowballs, you can use ANY recipe you like. The recipe I list is basic, but make sure and check out some of my other flavors, like chocolate chip or lemon or Reese’s stuffed. They’d all make amazing chocolate covered cookies.
  2. Once you’ve made the cookies (more on that in a minute), let them cool and then roll them in melted chocolate. While the chocolate is wet, you can add sprinkles or chopped nuts for decoration or wait for it to set and then dust them with cocoa powder or powdered sugar. That’s it!
  3. If you’re still worried, check out my video on how to make truffles without crying. I show you how to coat biscuits with chocolate, so it’s easy! Ancient video, ancient kitchen, but it gets the point across, and you’ll be making chocolate covered cookies like a pro.
  4. Oh, and a tip: you can use this dipping method for many different kinds of cookies. Think chocolate dipped shortbread cookies or other ones that you like.

Tips for Making Snowball Cookies

Dough: Beat the butter, powdered sugar, and vanilla in a large bowl with an electric mixer until fluffy. Add flour and salt and stir until the dough comes together. Mix in the nuts or chocolate chips if using. You should be able to form the dough easily with your hands. If it’s too soft, chill it so it can firm up.

Bake: Scoop one tablespoon of dough to make each cookie. Place them on prepared cookie sheets and bake them for seven to eight minutes at 375°F. Allow them to cool completely before coating them in chocolate.

Tips for Dipping Cookies in Chocolate

  • Don’t coat the cookies until they are completely cooled.
  • For the best results, use Candiquik, Ghiradelli Candy Melts or chocolate almond bark. To make the chocolate cookie dip, melt the bark or candy melts in the microwave following the package instructions. For easy clean-up, use paper bowls!
  • Dip each cookie in the melted chocolate and roll it around to coat it evenly. Tap off the excess chocolate. Place the cookie on a cookie sheet lined with wax paper. Repeat this process with the rest of the cookies.
  • If you want to add sprinkles, add them while the chocolate is still wet. Otherwise, leave the cookies until the chocolate has set. Once it is, dust them with powdered sugar.

Instructions

  • Preaheat oven to 375°. Line two cookie sheets with parchment paper or silicone baking mats.
  • Mix butter, ½ cup powdered sugar, and vanilla with an electric mixer until fluffy. Add flour and salt and mix until the dough comes together. Stir in the nuts or chocolate chips, if using. If dough is too soft, chill it until you can work it easily with your hands. It will come together fast with a stand mixer, slower with a hand mixer.
  • Scoop 1 tablespoon balls of dough onto prepared cookie sheets. Bake cookies for 7-8 minutes until bottoms are just slightly brown. Remove from oven and cool completely.
  • Melt chocolate according to package directions. I like to melt it in paper bowls because it’s easy clean up. Dip each cookie into the chocolate, roll and tap off excess. Place on a cookie sheet lined with wax paper and chill to harden. You can add sprinkles while the chocolate is wet if you want.
  • For garnish, sprinkle with powdered sugar.

    1. Were the cookies crumbly to begin with? That should not be the case. If that is how they were you did not mix the dough enough.

      1. they weren’t really crumbly but when I put it in the chocolate it got smooshed a guess and fell apart, I waited about 15 minutes and tried it again and it was still falling apart, I’ll try it again though
