Easy Apple Breakfast Cake

You could eat this recipe for breakfast or dessert, but I recommend starting your day off right with the more important meal and having some apple fritter cake. This cake uses cinnamon and apple cider to create the delicious flavor that this recipe serves. 

It also has a glaze that goes perfectly with the flavors in the cake. It tops the recipe of right and cannot be outdone!

Ingredients Needed

  • Cinnamon Streusel Muffin Mix: You can use any brand – some brands make muffin mix and some make coffee cake mix – either one will work.
  • Apple Cider: Adds all the apple flavor you need – don’t use apple juice, it’s not the same.
  • Ingredients called for on the mix: You’re going to make the cake as directed, but swap cider for water. Depending on the brand you’ll also need vegetable oil and eggs.

How to make Apple Fritter Coffee Cake

  • Make the cake batter with ingredients as directed on the back of the package, swapping apple cider for water.
  • Spread batter in prepared pan and top with crumble packet (usually the mixes come with this).
  • Bake cake for 30-40 minutes, or until a toothpick comes out clean in the center of the cake.
  • As soon as you remove the cake from the oven, make the glaze by whisking the powdered sugar, vanilla, apple cider and 1 tablespoon heavy whipping cream in a small bowl until smooth, adding more cream as needed for drizzle consistency. The glaze will be thick. Poke several small holes in the top of the cake using a toothpick, then evenly spread the glaze all over the top of the cake. Let the cake cool. As it cools the glaze will harden slightly..
  • Serve slightly warm or room temperature. Store covered at room temperature for up to 2 days.

Expert Tips

  • There are many different brands for the streusel muffin mix that you can use–whatever you choose is fine. Just follow the directions on the back and substitute the water for apple cider!
  • To know the cake is done baking–use the toothpick trick! Stick a toothpick in different parts of the cake and if it comes out clean it’s done! If your toothpick comes out of the cake with stuff still on it, then give it some more time!

Cake:

  • 1 box Cinnamon Streusel Muffin Mix (see note)
  • cup (158ml) apple cider
  • cup (79ml) vegetable oil
  • 2 large eggs

Glaze:

  • 1 cup (113g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon (15ml) apple cider
  • 2-3 tablespoons (30-45ml) heavy whipping cream or milk

Instructions

I used Betty Crocker Cinnamon Streusel Muffin Mix for this. Krusteaz also makes a cinnamon streusel cake mix you can substitute, as do other brands. If you substitute another brand, mix the recipe as directed on the package (using the ingredients called for) but substitute apple cider for water. Bake in pan as directed here on this recipe.

  2. This apple fritter coffee cake looks so good, I definitely want a slice right now!  Apple fritters sound even better as a coffee cake then they do as doughnuts!
