Meet your new favorite frozen treat, avocado lime popsicles! The first time I made these avocado popsicles, I was pleasantly surprised. It had the perfect balance of bright and flavorful. And in case you’re wondering, no. These avocado lime popsicles do not taste like guac!

Who would’ve known that an avocado frozen treat could be so delicious? From a smoothie bowl to a fruity popsicle, this sweet delight will definitely have your party coming back for more!

Ingredients Needed

  • Water and Granulated Sugar: You make a simple syrup with these, let it cool, and that’s what sweetenes your popsicles.
  • Avocado: the trick to getting the tastiest avocado popsicle is making sure your avocado is ready. You can check for the desired ripeness by giving your avocado a gentle squeeze. If it’s hard or too mushy then it’s no good to use. 
  • Lime juice: brighten up the popsicle flavor with fresh lime juice.
  • Vanilla extract: to bring out all of the flavors in our mixture.

How to make Avocado Popsicles

  1. Heat sugar and water in a saucepan over medium low heat until the sugar is completely melted. Be sure to stir the sugar while it heats to break up the little crystals quicker. Cool this completely before continuing.
  2. Blend avocado, lime juice, vanilla, and cooled simple syrup in a blender. Blend until smooth.
  3. Pour mixture into popsicle molds
  4. Top with popsicle sticks if your molds don’t come with them.
  5. Freeze until firm or at least 4 hours.

Expert Tips

  • Use ripe avocados for the best results.
  • To help remove popsicles from molds, run the molds under room temperature water for a few seconds or until they are able to pull out.
  • Want to make this a fun boozy treat? Serve in a glass of tequila!
  • You can either serve these treats immediately or remove them from molds and wrap them individually, then re-freeze them for later.
  • Add some chocolate chips to the popsicle molds for an incredible chocolate avocado combo! 
  • Use coconut water instead of water for a change of flavor!
